Italian Pumpernickel with mussels


Something healthy for breakfast... I look to the fridge, hmmm what can I find here?? Oooo pumpernickel and some mussels! I should quickly take this and do something!

So, I take:
2 slices of pumpernickel bread, 
0.5 cups of mussels without shells, 
2 tablespoons corn,
4 green olives, 
3 tablespoons grated edam cheese, 
0,5 onion,
basil, 
oregano, 
garlic salt, 
black pepper, 
2 drops Tabasco, 
2 tablespoons olive,

On the oil fry the chopped onions in a small cubes, add mules, fry while. Still stirring. Cover for about 3 minutes on low heat. Add the corn and all the herbs, spices and Tabasco. Fry for a minute and take from heat, add cheese and mix well and quickly. 
Put on pumpernickel bread still warm stew from mussels and add green olives cut on a half.

Shrimp with cherry tomatoes and garlic



The real aphrodisiac, ideal for lovers for a romantic dinner. Seafood is our delicacy, just love them! It is a pity that with us in Poland, they are quite expensive, but now more and more popular. We are happy that in Ireland shrimps are cheaper and so popular :D We make on shrimp, came proudly ... making shrimp focus on their natural and do not use too many spices and herbs to not kill the taste.

What do we need?
350g frozen shrimp,
5 cherry tomatoes,
2 cloves of garlic, 
0.5 cups spicy tomato juice,
0.5 pieces of lemon,
1 tablespoon of butter,
0.5 tablespoons of olive oil,
Sea salt,
Black pepper.

Melt butter in a pan, fry the garlic cut into slices, add the shrimp previously thawed. Season with salt and pepper and fry for 1 minute, add the olive oil, a slice of lemon with peel and cherry tomatoes cut in half, sprinkle with the rest of the lemon juice, fry for a while. Pour the tomato juice, bring to a boil and cook until the juice reduces and thickens. 
Serve warm with crispy baguette.

Salad with caramelized pear and Parsley



 Apparently salad but not the usual, amazed me! Especially caramelized parsley, yum. I think that on the party it will be great appetizer! 
And... onion marmalade, AMAZING!

We will need:
0.5 pieces of iceberg lettuce,
1 parsley ,
0.5 pear ,
50 grams of blue cheese ,
3 tablespoons onion marmalade (recipe below) ,
4 fruits of grapes ,
2 tsp shelled sunflower seeds ,
2 teaspoons balsamic vinegar ,
2 teaspoons vinegar souce ,
2 tablespoons honey ,
2 tablespoons olive oil



Peel parsley and cut into strips, coat with olive oil and honey and bake in the oven at 180 degrees about 30 minutes. After baking, cool it. 
Mince iceberg lettuce, place on plate, lay out the rest of the ingredients, sprinkle with balsamic vinegar and vinaigrette dressing. Finally sprinkle with sunflower seeds. 

recipe for onion marmalade:
1 white onion 
3.5 tablespoons  brown sugar 
1 tablespoon  olive oil 
2 tablespoons  dry red wine 
1 tablespoon  vinegar

Onions cut into small pieces, place in a saucepan on the hot oil, fry, add sugar, caramelize, pour the wine and vinegar. Simmer until it softens. Vigorous stirring crush it :) Cool it.

Mexican Tostada



Mexican party! Ole Ole! I'm sure everyone in your party will take piece of this delicious snack. Mexican variety of pizza.




To do, we will need:
4 pcs  tortillas 
400g chicken breast, 
1 red pepper 
2 tomatoes 
1 bunch  of chives 
100 grams of  white cheese 
120 grams of  Gouda cheese (grated) 


For the marinade:
20 grams fresh coriander 
0.5 lime juice, 
2 cloves of garlic
cayenne powder (just a little), 
50ml (small jigger) rapeseed oil, 
freshly ground pepper, 
sea salt, 


pinto beans salsa:
pinto beans 120 grams 
200 grams of canned sliced  tomatoes​​, 
1 onion 
2 cloves of garlic, 
0.5 jalapeno, 
fresh cilantro, 


guacamole:
0.5 jalapeno pieces, 
1 piece  avocado ,  
1 tablespoon  olive oil, 
the juice of half lemon, 
2 cloves of garlic, 
onions 0.5 pieces. 


Chicken breasts marinated in the marinade the day before, made ​​from the above ingredients. 
Leave overnight in the refrigerator. After all night cut into cubes and fry in oil. 

Salsa: To the pinto beans soaked (1night) and cooked (1h) in big pot add the fried one onion and two cloves of garlic, tomatoes from can, a half chalapenios peppers, fresh coriander (15g), season lightly to salt, pepper and a little bit of sugar. It all mixes together (does not have to be very carefully mixed) 

Fry tortillas in oil to make them crispy, grease salsa, sprinkle with grated cheese, we put pieces of chicken, fresh tomatoes, paprika and chopped chives. On top sprinkle with shredded white cheese. 

guacamole: Peel the avocado and remove the pit, add to it the juice of less than a half lime, 2 cloves of garlic, half an onion, a half jalapenos peppers, a tablespoon of olive oil and mix it. 

Have a hot sensation and of course tasty.

Smoked salmon with cucumber -party food



Are you making party? Do not forget to do something delicious to eat! I've got something special, very simple and extremely delicious ...


All you need is:
150 grams  sliced ​​smoked salmon
1 piece of pickled gherkins,
0.5 package  philadelphia cheese (grilled peppers)

On the table lay plastic wrap, put on  it salmon slices arranged so as to overlap slightly at each other. Spread Philadelphia on the edge and place the cucumber cut into quarters.

With the plastic wrap roll salmon and roll on both sides like a candy. Refrigerate for 2 hours.

After 2 hours, remove the foil cut diagonally and place on plate.
